Healthy Stuffed Bell Peppers

These bell peppers are stuffed with a delicious mix of ground turkey, sweet potato, and black beans for a well-rounded meal.

Ingredients

  • 4 bell peppers
  • 1/3 cup water or broth
  • 1/2 lb ground turkey
  • 1 tbsp minced garlic
  • cup sweet onion chopped
  • 1 sweet potato ~⅔ cups
  • cup black beans
  • 1 avocado
  • 1 tsp pink Himalayan salt
  • 1 tsp black pepper

Instructions

  • Preheat oven to 350 degrees. Prepare bell peppers for stuffing mix by removing the tops and seeds inside. Pour 1/3 cup water or broth of choice in an 8×8 inch pan. Place bell peppers standing upright in pan with liquid and set aside.
  • Bake sweet potato with preferred method. I like to poke holes around the sweet potato with a fork and wrap in either plastic wrap or a damp paper towel and microwave for ~7 minutes. You may also use a reusable potato sack.
  • While sweet potato is baking, add 1/2 lb ground turkey, 1/3 cup chopped sweet onion, 1 tbsp minced garlic to a pan on medium heat. Mix and add 1 tsp pink Himalayan salt and 1 tsp black pepper. Cook until done, drain oil (if needed), and remove pan from heat.
  • Add in 2/3 cup black beans and inside of baked sweet potato to pan with cooked turkey mix.
  • Mix until all ingredients are evenly spread. Stuff mix into each bell pepper evenly.
  • Cook stuffed peppers in oven for 25-30 minutes. Garnish with avocado slices over top, serve, and enjoy!
