No Bake Pumpkin Energy Bites

These no-bake pumpkin energy bites are perfect for any time of the day and will keep you full and energized!
They are little balls of gluten-free rolled oats and other simple ingredients. While they are super easy to make, they are also super nutritious!
This recipe includes pumpkin, ground flaxseed, and chia seeds. Pumpkin is loaded with fiber, which is amazing for your gut and cleanses your colon. The good bacteria in your gut feed off of fiber for a nice flowing digestive tract.
Pumpkin is also full of antioxidants. It’s packed with Vitamin A, Vitamin C, Vitamin E, Iron, and Folate, which can strengthen your immune system. Overall, pumpkin tastes just as good as it is beneficial!
Flaxseed is a prebiotic and provides good bacteria to the microbiome of your gut. Both flaxseed and chia seeds are full of fiber and will help keep you full. Fiber is amazing for gut health and aids in healthy digestion.
This recipe also contains nut butter. A word of advice – BE PICKY with your nut butters! So many name-brand products contain unnecessary additives, which can be harsh on your gut.
Instead, look for nut butter products that either list only the type of nut and salt or for products that don’t contain inflammatory oils. Most local grocery stores sell their own brands with minimal ingredients. My other favorite nut butters are from Wild Friends and RX Bar.
When it comes to vegan chocolate chips, I LOVE and will always recommend the dark morsels from Enjoy Life.

No Bake Pumpkin Energy Bites
Ingredients
- 1 cup gluten-free rolled oats
- 1/4 cup pumpkin puree
- 1/4 cup nut butter
- 1/4 cup honey/maple syrup
- 1/4 cup vegan chocolate chips
- 2 tbsp ground flaxseed
- 1 tbsp chia seeds
- 2 tsp pumpkin pie spice
- 1 tsp vanilla
- 1/2 tsp salt
Instructions
- Mix all dry ingredients (1 cup gluten-free rolled oats, 2 tbsp ground flaxseed, 1 tbsp chia seeds, 2 tsp pumpkin pie spice, and 1/2 tsp salt) in a bowl.
- Mix all wet ingredients (1/4 cup pumpkin puree, 1/4 cup nut butter, 1/4 cup honey/maple syrup, 1 tsp vanilla) in a separate bowl.
- Combine the dry and wet ingredients until evenly mixed. Add in 1/4 cup vegan chocolate chips and stir.
- Cover bowl and put in refrigerator for 30-60 mins.
- Roll the mix into ~2 tbsp balls. Store in an airtight container. Enjoy!
