Ingredients

  • 1 cup gluten-free rolled oats
  • 1/4 cup pumpkin puree
  • 1/4 cup nut butter
  • 1/4 cup honey/maple syrup
  • 1/4 cup vegan chocolate chips
  • 2 tbsp ground flaxseed
  • 1 tbsp chia seeds
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla
  • 1/2 tsp salt

Instructions

  • Mix all dry ingredients (1 cup gluten-free rolled oats, 2 tbsp ground flaxseed, 1 tbsp chia seeds, 2 tsp pumpkin pie spice, and 1/2 tsp salt) in a bowl.
  • Mix all wet ingredients (1/4 cup pumpkin puree, 1/4 cup nut butter, 1/4 cup honey/maple syrup, 1 tsp vanilla) in a separate bowl.
  • Combine the dry and wet ingredients until evenly mixed. Add in 1/4 cup vegan chocolate chips and stir.
  • Cover bowl and put in refrigerator for 30-60 mins.
  • Roll the mix into ~2 tbsp balls. Store in an airtight container. Enjoy!
