Honey Garlic Roasted Chickpeas

Love snacking? If you’re in the mood for something that is sweet, salty, and crunchy, these honey garlic roasted chickpeas are calling your name! You will have the hardest time not eating all of these in one sitting, trust me.
While this snack does hit the spot, it also comes with some great benefits. Garbanzo beans (chickpeas) are a great source of protein and tend to be a great protein substitute for vegetarians and vegans. They are full of fiber, so, your gut will definitely thank you for the digestive help.
But, what are chickpeas? Also called garbanzo beans, they are a legume that have a nutty flavor, as they are in the peanut family. They also have a low glycemic index, meaning that they won’t have much of an impact on your blood sugar levels. So, this recipe is great for someone trying to manage their blood sugar levels and/or trying to cut out those refined and processed foods that tend to come with a higher glycemic index.

Not only are chickpeas full of nutrients, they are super versatile! They can be eaten alone, added to a salad, or topped over your favorite dish for a nice crunch.

Honey Garlic Roasted Chickpeas
Ingredients
- 1 can garbanzo beans (chickpeas)
- 1 tbsp extra virgin olive oil
- 1 tbsp honey
- 1/2 tsp garlic powder
- 1/2 tsp pink Himalayan salt
Instructions
- Preheat oven to 375° F. Line baking sheet with parchment paper or aluminum foil. Spray favorite cooking spray over top.
- Drain and rinse 1 can garbanzo beans (chickpeas). Spread chickpeas evenly on baking sheet. Cook in oven for 30 minutes in order to dry out chickpeas. Be sure to gently shake the pan every 10 minutes or so to ensure they cook evenly.
- While chickpeas are in the oven, mix 1 tbsp olive oil, 1 tbsp honey, 1/2 tsp garlic powder, and 1/2 pink Himalayan salt in a small bowl.
- Once chickpeas are out of the oven, drizzle liquid mix over top and shuffle chickpeas around to evenly coat.
- Cook in oven for 10-15 minutes at 375° F. Gently shake pan every 5 minutes. Once done cooking, let cool and enjoy!
