Deviled Eggs

Is your name Debbie and do you like eggs? Debbie from “The Amanda Show” is a whole mood because I LOVE eggs. Regardless of how they are cooked, they are a staple in my diet.
Along with this article, I too think that eggs are basically the perfect food. They are full of protein, healthy fats, various vitamins, antioxidants, and have been said to reduce the risk of heart disease.
With that being said, I also love me some deviled eggs. However, I wasn’t always a fan of one of the other ingredients used to make deviled eggs.
The base for this recipe uses mayonnaise and mustard, and most mayonnaise producing companies use soybean oil as the base of their mayonnaise. Check out this article that describes the negative effects of poor quality oils (specifically soybean oil) that, to me, outweigh any benefits. According to that article, poor quality oils are very common in U.S. products and majority of soybeans are genetically modified in the U.S.
Everything is completely fine to be consumed in moderation, however I am always on the hunt for better quality products with the best ingredients (and because I could totally eat deviled eggs all the time).

Speaking of high quality products, I also used my DASH Egg Cooker to “boil” my eggs for this recipe. I absolutely LOVE this egg cooker! You can cook boiled eggs, poached eggs, scrambled eggs, and omelets with this egg cooker. You can boil your eggs to your preferred yolk texture so easily and it has an auto shut-off feature that ensures you won’t overcook your eggs.
For this recipe, I boil the eggs using the directions for a hard boiled egg, which cooks for 15-16 minutes. As easy as this product is to use, the aspect that truly sold me was the egg shells coming off so smoothly after boiling! When I say smooth, I mean SMOOTH. I don’t think I will ever boil eggs the conventional way anymore.

Deviled Eggs
Ingredients
- 6 eggs
- 3 tbsp mayonnaise avocado oil based
- 1 tbsp mustard
- 1/4 tsp paprika
- 1/4 tsp chili powder
- salt
Instructions
- Hard boil 6 eggs by preferred method. If using Dash Rapid Egg Cooker, cook eggs for 15-16 minutes.
- Place boiled eggs in ice water for ~10 minutes. Once cooled, peel shells off eggs.
- Cut boiled eggs in halves lengthwise. Remove yolks by gently squeezing the sides of the halved eggs into a bowl and place egg whites on a plate.
- Mash yolks in bowl until even crumbles form. Add 3 tbsp mayonnaise, 1 tbsp mustard, and salt to taste and mix until a creamy spread forms.
- Transfer mixture into a square plastic baggy and cut off a corner to squeeze the mixture evenly into the egg white halves. You may also spoon the mixture into the egg white halves.
- Garnish with paprika and chili powder. Chill for 30-60 mins before serving. Enjoy!
