This baked french toast casserole is sure to become your new breakfast obsession. It’s packed with protein, great flavor, and amazing texture!

If you’re anything like me, you love having something sweet for breakfast. However, it’s a must to get in a good amount of protein at the beginning of the day to stay full and energized. This is one of my favorite recipes to curb that morning sweet tooth AND get in that protein.

The high protein content comes from the collagen and eggs. Both are amazing sources of protein and will be sure to keep you full. My favorite collagen peptide powders are from Equip and Vital Proteins. Both brands have amazing quality!

Collagen peptides are one of my go-to protein sources. They can be added to smoothies and other dishes. Even though the powder has NO taste, it contains a LOT of benefits!

They are commonly known to be a supplement that can be taken to improve skin, joint, hair, and nail health. Being that collagen is protein, it can also aid in stimulating muscle growth. They are also said to promote heart, gut, and brain health. Sounds like magic in a powder for me!

Personally, I’m very into strength training/weight lifting and love staying active. More often than not, I replenish my body with a protein shake after a workout. Collagen can easily be added to any protein shake for an extra protein boost or be the protein base of the shake. Regarding skin health, I notice a *glow* when I consistently take collagen. 10/10 would recommend always!

Regarding gluten free bread, my absolute favorite is from Canyon Bakehouse! Their loaves contain 14 pieces of bread, so, it’s so easy to throw them all in this casserole.

I’ll be honest, this casserole can be eaten for a protein-packed dessert. It’s sooooo good! The top has a nice crunch to it, which ties everything together.

My favorite way to eat this dish is with some powdered sugar and maple syrup drizzled on top. I also enjoy adding fresh fruit to the top. The variations are endless!

Ingredients

  • 12-14 slices gluten free bread
  • 12 eggs
  • 2 scoops collagen
  • ½ cup coconut milk unsweetened
  • 3 tbsp maple syrup
  • 2 tbsp cinnamon
  • 1 tsp vanilla
  • 1 pinch of salt

Instructions

  • Pre-heat oven to 350° F.
  • Spray a 9''x13'' baking pan with your favorite cooking oil.
  • Slice gluten free bread into cubes. Place and spread evenly into pan.

  • Mix 12 eggs, 2 scoops collagen, ½ cup unsweetened coconut milk, 3 tbsp maple syrup, 2 tbsp cinnamon, 1 tsp vanilla, and a pinch of salt with a blender. Please note that collagen can become clumpy if not mixed properly.
  • Pour liquid mix over cubed bread in baking pan.

  • Bake for 50 minutes.

Notes

If re-heating, try air-frying at 350 degrees for 5 minutes to keep that amazing crunch!
