Collagen Cinnamon Pecan Baked Oatmeal

This baked oatmeal recipe will have you begging for more and feeling great while doing it.

Filled with collagen peptides, this baked oatmeal is a filling and well-rounded breakfast. The pecans and brown sugar over top really shine and bring out the cinnamon flavor.

I really wanted to make an oat-based recipe that was packed with protein but didn’t taste like it, if you know what I mean. Insert collagen peptides!

Collagen peptides are one of my go-to protein sources that can be added to smoothies, shakes, and baked goods. The powder has absolutely NO taste! However, it does have A LOT of benefits.

So, what is so special about this magic powder? I’m sure you have heard of collagen peptides at some point. They are commonly known to be a supplement that can be taken to improve skin, joint, hair, and nail health. Being that collagen is protein, it can also aid in stimulating muscle growth. They are also said to promote heart, gut, and brain health.

Honestly, as soon as I heard taking collagen could promote skin health and boost muscle mass, I was sold. I was skeptical, but I thought, why not try it? I’m very into strength training/weight lifting and love staying active. More often than not, I replenish my body with a protein shake after a workout. Collagen can easily be added to any protein shake for an extra protein boost or be the protein base of a shake. Regarding skin health, I seem to notice a *glow* when I consistently take collagen.

I will be making a more in-depth post about how I like to utilize collagen and my experience, soon. All positives! I’ve heard nothing but good things from others, as well.

Ingredients

  • 3 cups gluten free old fashioned rolled oats
  • 2 tsp baking powder
  • 3 tbsp cinnamon
  • 1 ¼ cup unsweetened coconut or almond milk
  • 2 scoops collagen peptides
  • 3 eggs
  • 2 tbsp honey
  • ½ cup chopped pecans
  • 2 tbsp brown sugar

Instructions

  • Pre-heat oven to 350 degrees. Spray your favorite cooking oil on an 8×8 inch pan.
  • Add 3 cups old-fashioned rolled oats, 3 tbsp cinnamon, and 2 tsp baking powder to a large bowl and mix. Set aside.
  • Add 1 ¼ cup coconut or almond milk, 3 eggs, 2 scoops collagen peptides, and 3 tbsp honey into a blender. Blend until ingredients are mixed and slightly frothy due to the collagen peptides. If mixing by hand, be sure to mix thoroughly as collagen peptides have the ability to clump.
  • Pour liquid mix into dry ingredient mix and stir until well blended.
  • Pour into pan and sprinkle 1/2 cup pecans and 2 tbsp brown sugar over top.
  • Bake in oven for 25 minutes. Once done, let cool and enjoy!
