Collagen Cinnamon Pecan Baked Oatmeal

Ingredients

  • 3 cups gluten free old fashioned rolled oats
  • 2 tsp baking powder
  • 3 tbsp cinnamon
  • 1 ¼ cup unsweetened coconut or almond milk
  • 2 scoops collagen peptides
  • 3 eggs
  • 2 tbsp honey
  • ½ cup chopped pecans
  • 2 tbsp brown sugar

Instructions

  • Pre-heat oven to 350 degrees. Spray your favorite cooking oil on an 8x8 inch pan.
  • Add 3 cups old-fashioned rolled oats, 3 tbsp cinnamon, and 2 tsp baking powder to a large bowl and mix. Set aside.
  • Add 1 ¼ cup coconut or almond milk, 3 eggs, 2 scoops collagen peptides, and 3 tbsp honey into a blender. Blend until ingredients are mixed and slightly frothy due to the collagen peptides. If mixing by hand, be sure to mix thoroughly as collagen peptides have the ability to clump.
  • Pour liquid mix into dry ingredient mix and stir until well blended.
  • Pour into pan and sprinkle 1/2 cup pecans and 2 tbsp brown sugar over top.
  • Bake in oven for 25 minutes. Once done, let cool and enjoy!
