Looking for something different than your ordinary tortilla? You have come to the right place. These sweet potato tortillas are sure to knock your socks off!

These are so easy to make. With only two ingredients, sweet potatoes and gluten free flour, you can’t get any easier than that.

Sweet potatoes are one of my favorite ways to get complex carbs in. They are known to promote gut health, as they contain soluble and insoluble fiber as well as antioxidants. Also, Vitamin A!! Sweet potatoes are hearty with beta-carotene and Vitamin A, which is critical to maintaining a healthy gut lining, and provide many other benefits.

I love making these sweet potato tortillas and storing them in the fridge for the next day or so, as well. I like to pop them in the air fryer for about 3 minutes at 375 degrees and they taste like a sweet potato version of naan bread! Soooo good and definitely worth a try.

As this recipe is simple to execute, I recommend getting this Reusable Microwave Potato Bag. It makes it super easy to bake a potato and can also be used to cook other foods like corn on the cob. Otherwise, my other go-to way to bake a potato quickly is to poke some holes throughout the tater, wrap it in a damp paper towel, and microwave for ~6 minutes. I also highly recommend using either of these brands for the gluten free 1-to-1 baking flour: Bob’s Red Mill and King Arthur are my favorites!

Ingredients

  • 1 sweet potato ~2/3-1 cup
  • 1/4 cup gluten free 1-to-1 baking flour

Instructions

  • Bake 1 medium sweet potato by preferred method.
  • Once cooked, scoop out the inside and mash in a bowl.
  • Mix mashed potato and 1/4 cup gluten free flour with dough mixer or hands.
  • Once thoroughly mixed, split dough into 2-3 parts depending on how big you want your tortillas.
  • Shape tortillas with rolling pin or use hands. Tip: Keep your fingertips wet and lightly coat in flour to ensure the dough doesn't stick to your hands and/or break.
  • On a low-medium heated pan, spray with favorite cooking oil. Lay each tortilla on pan for ~3-4 minutes on each side until cooked. Enjoy!
