This pudding is so easy to prep at night. It’ll take you less than 10 minutes and you will be able to grab it and go in the morning. Perfect for the on-the-go type of person or those early mornings.

Never tried chia seed pudding before? No worries, we have all been there (lol). If you have never tried chia seed pudding, let this be your push. At first, I was nervous I wouldn’t like it because of the texture, but I was wrong. Once you get used to it, you’ll really enjoy the dish. After trying it for the first time, I really wished I had tried it sooner. The ingredients are simple and the taste is great!

When making chia seed pudding, I have learned to always stick to a 1:4 ratio of chia seeds and your milk of choice. Every time I have stuck to that logic, my pudding turns out perfect. I tend to store my puddings in recycled old glass yogurt or salsa containers. I recommend you do the same!

Now, let’s talk chia seeds for a minute. Chia seeds are super beneficial and are said to be one of the healthiest foods. They are high in protein, fiber, and omega-3 fatty acids. Being that they are high in omega-3 fatty acids, chia seeds are super beneficial for brain health. The high amount of fiber in them makes them a perfect candidate to benefit the gut. They are also packed with antioxidants and other nutrients, like calcium, that can support strong bones. Saying they are a superfood is an understatement! Collagen Chia Seed Pudding

This overnight chia seed pudding is a great base and is packed with collagen! It is so easy to prep and grab in the morning for breakfast or have for a filling snack.

Equipment

  • Blender

Ingredients

  • 2 tbsp chia seeds
  • 8 tbsp unsweetened coconut milk
  • ½ scoop collagen peptides
  • 2 tsp honey or maple syrup
  • toppings of choice

Instructions

  • Add 8 tbsp unsweetened coconut milk, ½ scoop collagen, and 2 tsp honey to blender. Blend until mixed and smooth.
  • Add 2 tbsp chia seeds to blended liquid mix and stir until seeds are evenly distributed.
  • Put mixture into airtight container and store in fridge overnight. In the morning, stir mixture, add desired toppings, and enjoy!

Notes

I recommend using a blender to mix collagen, coconut milk, and honey because collagen can get clumpy very easily if not mixed properly. If you don’t have a blender, I suggest using a blender bottle of some sort to shake and mix.
