Antioxidant Avocado Brownies

These superfood brownie bites are a delicious treat that are both gluten and dairy free. They have an avocado (flour-less) base and have a slight crunch with the addition of cacao nibs.

I am always down to try out new healthy dessert recipes. My sweet tooth loves anything chocolate and these brownies are a choco-packed dream without adding a bunch of sugar.

The ingredient list is quite simple just how I like it. Being that they are filled with healthy fat from the avocado and antioxidants from the cacao nibs, they are perfect for a tasty snack or a healthy dessert.

This recipe includes nut butter – any nut butter will work! I like to use the RX nut butters or Wild Friends! Dagoba Organic Unsweetened Cocoa Powder or Navitas Organics Cacao Powder are two of my favorites when it comes to cocoa/cacao powder. I also use dairy free dark chocolate chips. I would recommend using Hu Kitchen dark chocolate gems (yum!!) or Enjoy Life dark chocolate vegan morsels.

Antioxidant Avocado Brownies

Ingredients

  • 1 avocado
  • 2 large eggs
  • 1/4 cup nut butter of choice
  • 1 tbsp maple syrup or honey
  • 1/2 cup unsweetened cocoa/cacao powder
  • 2 tbsp cacao nibs
  • 1/2 cup brown sugar
  • 1/2 cup dairy free chocolate chips
  • 1 tsp baking powder
  • 1 tsp vanilla

Instructions

  • Preheat oven to 350 degrees F (175 degrees C). Spray a muffin tray with favorite oil or cooking spray. Set aside.
  • Mash 1 ripe avocado in bowl until a thick creamy consistency is formed. Add in 2 large eggs, 1/4 cup nut butter, 1 tbsp maple syrup or honey, and 1 tsp vanilla and mix.
  • In another bowl, mix together your dry ingredients: 1/2 cup cocoa/cacao powder, 2 tbsp cacao nibs, 1/2 cup brown sugar, 1/2 cup dairy free chocolate chips, and 1 tsp baking powder.
  • Add wet ingredients in with dry ingredients and mix until a creamy brownie batter texture has formed.
  • Pour batter into muffin tins evenly. Bake for 30 minutes. Let cool and enjoy!
